Dried Cherry Chutney
Can be used on sandwiches or Armenian cracker bread roll-ups with ham or turkey.
Ingredients:
- 1/2 cup red wine
- 1 jalapeno pepper, seeds and membranes removed, minced
- 2 Tbs. shallots, finely minced
- 2 tsp. peeled and minced fresh ginger
- 1/2 cup Sonoma® Sweet-Tart Cherries
- 1/4 cup orange juice
- 1 Tbs. fresh mint leaves, chopped
- Salt and pepper
Instructions:
n a medium saucepan, bring wine, jalapeno pepper, shallots and ginger to a boil. Add cherries and orange juice and simmer until thickened and most of the liquid has been absorbed. Remove from heat. Stir in mint and season with salt and pepper to taste. Let cool. Serve as is with pork chops or lamb loin. To make a spread, process chutney with 8 ounces of cream cheese; terrific on bagels for breakfast.
