Muffaletta Sandwich
This Mediterranean Muffaletta Sandwich is a hit with everybody! Great after your next century ride!
Ingredients:
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 10" (whole) foccacia bread
- 1 1/2 cups SonomaĆ Muffaletta
- 1 avocado, peeled, pitted and sliced
- Thinly sliced lettuce leaves
Instructions:
In a bowl, combine mayonnaise and yogurt; set aside. Slice foccacia bread in half horizontally. Spread half of mayonnaise mixture over the bottom half of the foccacia, layer with shredded lettuce, then Muffaletta, and avocado slices. Spread top half of foccacia with remaining mayonnaise mixture and place on top of filling. Wrap sandwich tightly in plastic wrap and refrigerate until ready to serve. Remove wrap and cut sandwich diagonally into individual wedges. Substitute light mayo for a lighter calorie meal.
