Pasta Sauce with Dried Tomatoes
Not as quick as opening a jar of ready-made sauce, but will pique appetites with the aromas of home cooking.
Ingredients:
- 1 Tbs. olive oil
- 1 medium onion, chopped
- 3 cloves garlic, peeled and minced
- 2 Roma tomatoes, chopped
- 15 oz. can tomato sauce
- 1/2 cup dried tomato halves, reconstituted* and quartered
- 1/4 tsp. dried basil
- escarole
Instructions:
Heat olive oil in a sautÈ pan over medium heat. Add onion and cook until it turns golden. Add garlic and Roma tomatoes and stir for 2 minutes. Add remaining ingredients, and simmer until bubbling and thickened. If sauce is too thick, add a little red wine or water to thin to your liking. Taste and season with salt and pepper.
*Note: to reconstitute dried tomatoes, place them in a heat-proof dish or measuring cup and cover with boiling water for 5 minutes. If making pasta, you can reconstitute the tomatoes for a couple of minutes in the boiling pasta water before adding the pasta. Retrieve the softened tomatoes with a strainer or slotted spoon.
