Pineapple-Avocado Salsa
Great over fish or chicken.
Ingredients:
- 1/2 cup Sonoma® dried pineapple
- 1 large avocado (ripe, but not too soft)
- 3 Tbs. seasoned rice wine vinegar
- 1 shallot
- 1/2 red bell pepper
- 1/2 cup olive oil
Instructions:
Hydrate pineapple in hot water and drain. Chop into 1/4" bits. Peel avocado and dice into 1/4" cubes. Add vinegar to avocado-pineapple mixture. Finely dice shallot; add to mixture. Finally, dice red pepper and add to bowl. Add olive oil and gently stir together.
Serve over seafood or chicken.
